Sweet Potato Cookies with Chocolate Chips recipe
Simply delicious! Shredded sweet potato adds a bright sweetness to already luscious chocolate chip cookies. Make a double batch and save them for the next week!
Ingredients List:
½ cup butter
¼ cup brown sugar
1 egg
½ cup molasses
1 cup grated sweet potato
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
¼ teaspoon nutmeg
¼ cup buttermilk
½ cup chocolate chips
Directions:
1) Preheat oven to 375°F. Lightly grease a baking sheet.
2) In a large bowl, cream butter and sugar until thick and fluffy. Add egg and beat well. Add molasses and sweet potato; mix well and set aside.
3) In a separate large bowl, sift together flour, cinnamon, baking powder, salt, baking soda, and nutmeg. Add to sweet potato mixture, along with buttermilk; mix until just blended. Stir in chocolate chips.
4) Drop in teaspoons onto prepared baking sheet. Bake 15 minutes, until golden brown.
